Healthy Avocado Egg Breakfast Sandwich
This list has plenty of lunch and dinner options. But I wanted to start with a breakfast alternative to avocado toast.
After all, breakfast is the most important meal of the day!
This sandwich piles a fried egg, spinach, tomatoes, and avocado on whole-grain bread.
Add some mozzarella, garlic, and pickles (if you like), and you’re all set.
It’s a filling, flavorful vegetarian sandwich that’ll start your day off right.
Fixings
- ½ avocado
- 1 garlic clove, minced
- 1 tbsp chopped pickles
- 1 fried egg
- 2 slices of bread of choice
- 1 cherry tomato, sliced
- 1-2 Tbsp mozzarella
- Handful of spinach
Method
Fry an egg on both sides or prepare as you prefer!
Top one slice of the bread with the avocado and minced garlic. Mash the avocado, spreading it all over the bread.
Put the fried egg on top. Then add the pickles, tomato slices, spinach, and mozzarella. Finally, top it with the other slice of bread.
Add a little bit of olive oil to a nonstick pan and toast the bread on both sides for 2-3 minutes or until golden brown.
